I have a '51 GMC panel, with vent windows. I also have a 47 1/2 parts truck with one piece windows.
Is it possible to remove the 'guts' from the doors of each to convert my 51 panel doors to one piece windows ?
A door swap isn't a good option in this case.

You have the best of both worlds here in that you have both sets of doors. However I believe the regulators both mount the same way with 3 screws but I could have forgotten, its been a while. The later regulator is shorter because the glass is not as long. There is a difference in the sheet metal on the door as well. For instance there is a notch on the later door for the vent window rear frame as well as on the window trim.
