The 5 window is a priority to me, but my ultimate truck is a 1/2 ton. What are the differences from the 1 ton to the 1/2 ton on the body (I plan on getting a new under carraige anyway)? Could I get a 1/2 ton frame (undercarraige) and drop the 1 ton cab on it? Also, are the Chev and GMC boxes and fenders the same?

I have a 52 Chevy 1 ton pickup and would never trade it for a 1/2 ton.
If you want a truck to use keep the 1 ton, if you don't need a truck then the 1/2 ton may work for you.
If you have to, the cabs are all the same until the really big trucks, the tractor trailer size ones get bigger. For the 1/2, 3/4, and 1 ton, all of the sheet metal is the same, with the obvious exception of bed and running board length. Fenders, hood, grill, and running boards change, but are the same for the 1.5 and 2 ton.
The GMC trucks bigger than 2 ton have larger fenders and such, and eventually, the biggest ones everything is different.
I would hope you could leave the 1 ton together and find a suitable 1/2 ton if that is what you have to have. You could probably trade someone for a 1/2 ton if you asked around here.
If I had a 1/2 ton I would trade for a nice 1 ton in a heartbeat.
