I have hunted around a little and came up with a couple of answers, but... What is the factory engine color on the 1951 248? I have seen Red/Orange and someone even commented Chevy Orange, is there a specific shade?

I haven't found one, but Duplicolor DE1605 is close enough, as long as you ignore the "Ford Red" on the label.
