I have a 1949 Chevy 3600 that I’m starting to put back together. I’m struggling to find the right size bolts and screws that fit the dash. I had all the parts painted, chromed or powder coated and can’t find my original nuts and bolts. I need sizes for the following….. Nuts that hold gauges to dash. Screws for the glove box hinges that screw into dash.
Yes, the gauge cluster studs are 10-32. I just confirmed on my cab. I believe the glove box hinge screws sheet metal thread, with clip nuts that go on the glove box liner. The glove box screws are available from Jim Carter HERE.

Yes 10-32 and you can find or make knurled nuts (for use just with your fingers) that make life easier. Getting a socket in there isn't a lot of fun and they do not need to be over-tight.
In fact some of the aluminum ones that come with aftermarket gauges are the right thread already (or if 8-32 you can drill and tap a size up to 10-32). Otherwise I've made them on the lathe, but that's not for everyone.

The knurled nuts (screenshot below) mentioned above are available at most of your local hardware stores for just a couple bucks.
Definitely easier to install than hex nuts with a wrench up inside the dash area!
