Friday I coated every inch of the inside and outside with Epoxy primer. My question is: Is there any reason to topcoat the epoxy in areas which will never be see or exposed, like behind the dash, the floor behind the seat, etc. etc.

Whenever I do subframe work or part repairs on my ute, I clean any rough looking metal and aluminium parts with a rotary wire brush and just do two coats of epoxy primer, years and years later that primer is still solid and no more rusting.
It also gives a good satin look to the part
