So even after a friend warned me, I still screwed up the sending unit in the tank when I was rewiring. If I loosen the wire nut, I can get it to register the tank level correctly, but when I tighten it down, it moves and the gauge pegs to full. Has anyone done anything to fix this? Or am I destined to replace the whole unit? Thanks!

Sounds like when you tighten the nut it is grounding out. There is a write up if you search the posts about the sending units and how to check them out. My truck has the behind the cab tank and turnedout my problem was a float that filled with fuel.

On the senders I've seen, that nut is on a stud that is insulated as it goes thru the flange and is connected to a stiff, insulated, conductive strap. Maybe you ae twisting that strap inside. Grounding that stud/wire should read empty, not full. Full should mean you are breaking connection somehow. Torque the nut so it is reading correctly while wire terminal is ON TOP of the nut. Then add another nut to sandwich the wire terminal without moving the lower nut. If there are already two nuts just be sure bottom nut does not turn when tightening top nut.
