Just wondering what is the best and easiest rear end to swap out to is on a 51 3600? I want to do awya with the drums and go disc all around.

nothing wrong with rear drum brakes

The short answer is you will have to make up your own kit

one solution is to use 1/2 ton axles

There's a few ways you can do it. One would be to find a later model rearend with disk brakes already on it. In that case, and I'm taking it you want to stay 8 lug since you do not specify, a Dana 60 from a late model E250 van would be just about right for width. They're also very common, usually with a 3.55 ratio.
Another option, though it does not address the gear ratio issue, would be to adapt late model disk brakes to the existing axle. That may require a bit of fabrication to make it work.
Something else you might want to take a look at is this disk brake conversion for the front axle, which is made to use late model GM 3/4 ton brake parts.

You did say easiest... On my 3600 I went with 1/2 ton running gear (1/2 ton front and rear axles) and I believe you can get kits for disc on both.

You could also try to find a 14 bolt rearend out of 73-87 Chevy truck. They had a dually version that was 63" wide, which is the same width as your 3600. Mostly, they came in a 4.10 gear ratio, but 4.56, 3.73, 3.42 and even 3.21 are out there.

If you want disc brakes, you can look at late model GM from 99 and newer trucks and 2003 and newer vans. The late model rearends are typically wider than their earlier counterparts, it is possible to retrofit their brakes to earlier axles.

For front disc brakes, well that's a tough one. If you stick with the 8 lug, you're not going to find much. The link that Bill posted, is the best design I've seen anyone have.
