So after driving my 1951 chevy 3100 for an hour or so, it starts to run poorly and will shut off. If I let it cool down, it will start no problem. An old timer told me it's probably an ignition resistor? It's still 6 volt and I just changed the coil and it didn't make a difference.

6 volt ignition systems don't have a resistor. Check out the back of the ignition switch (carefully) when it shuts down- - - -I'll bet it will be hot enough to burn your fingers. Dirty connections inside the switch will heat up and restrict the current flow. Try connecting a jumper wire from the battery cable at the starter to the + side if the coil (not the distributor side!) the next time it stalls and see if it restarts.

This is the time to state if you have been driving it all along and it suddenly did this, or you or someone has been "remodeling" it. It helps to know that before diagnosis. thanks.
P.S. an hour is a fairly long time. It is probably, as HRL says, a hot electrical problem somewhere as opposed to dirty fuel filter, charging fault, battery dying, etc. Do you have temp, oil, or amp gauges and how do they look at 45 minutes? Any cab smells? You can remove switch from dash, let hang (with all wires still hooked up) and jump the switch terminals from inside cab after it dies. Support the switch and it's wires in hang mode.

UPDATE: Yes all gauges are perfect at the time of shut off. I put a new 6 volt coil in. All the wiring on the truck is original. When it shut off this time I ran a wire from the hot side of the starter to the + side of the coil and it still did nothing. It was worse yesterday than ever. Could it be a bad condenser?

I would check for spark when it dies to make sure it is electrical. Put a spare plug on top of the motor, connect one of the spark plug wires and turn it over. If there is no spark then you are on the right trail.
