Must use a relay! Electric fans draw a lot of current. On my car project, the fan power is direct to the battery thru the relay via 10 ga wire. The fan will run with the ignition off if the engine is hot. I have a water temp switch and an override toggle switch wired to the relay to control the fan along the same lines as the diagram Cletis refered to.
