When I would drive my s10 I had the same problem when I would skip gears (I was trying to get used to the shift pattern) the engine would act bogged down then it would regain enough power to work though it.
I am positive there is more to the problem with the engine sitting as long as it did but the way the problem progresses through the gears getting increasingly worse the high the gear seems to indicate an adjustment to me but I could be wrong.
