I don't think carbs are that difficult to rebuild, but you should check/eliminate the easy and obvious things first. Fuel pump output, spark plug type & gap, point gap/dwell, timing, you get the idea.
I agree that it sounds like the accelerator pump, but it's odd that it started acting up "recently" with "recently" changed ignition parts.
