The temp gauge is a voltmeter, it's reading the rise in voltage as the temp sender resistance goes down. I didn't see the resistance for a 60s truck, but the later trucks use about 1400 cold and 50 hot. You should have voltage at both sides if the gauge, and at the sender. If you momentarily short the sender wire you should see the gauge spike.
