the thermostat just makes sure it doesn't run colder than whatever its value is, the rating is the temp it opens fully, a few degrees below that it will start to close - if your 235 is running around 180, that's a good thing, if you put a 160 in, it would prolly run about 160, in my experience they tend to run cold if they can
