What is the benfit of having the valves gapped at say .007 and .014 vs the .010 and .020?

that is what I am more curious about. I understand these trucks were made to run. But here is my thought train.

=4355lbs give or take for extra junk.

most of the time we will be on rolling hills 70-80'F

but there are mountatins for 4-5 days of the trip with two set of steep crossings.

My thought is to leave them at .010 and .020 to leave them plenty of room to handle the extended heat from 400 mile days and climbg over mountains.

would .008 and .015 be better and why?
