The first thing to do is all new brake components. Then, as you say, tires, fluids, battery, etc.
By all means get it running and drive it as is for a while. Repair the little things while using it. Un-restored trucks are always a hit at local car shows. And they are fun to drive. Get used to people waving at you.
Don't try to start that engine on old gasoline. Go to our Engine and Driveline section and do a search for "starting" for discussions of what you need to do.
