The easiest carb upgrade would be Stovebolts Holly/Weber with a 2bbl to 1bbl adapter. The cost is right too.
The Offy 4bbl manifold is thought to be the best street manifold. You will have to adapt the throttle linkage or replace with a cable. In addition you may have add a heater box under the carb for best performance, if you also have headers.
