What you're looking for according to the pic is the custom option seat fabric. It is nylon fabric that will be trimmed in vinyl. I used this in the resto of my 59 and though a little pricey you can find it at SMS Auto Fabrics
http://www.smsautofabrics.com/ along with the vinyl. BTW, I used the charcoal/gold combination but it is also available both in blue and green depending on the color of your paint. Hope this helps.
