Copper gaskets do, composite gaskets can vary, depending on what it's made of. I personally use Fel-Pro, and did use a composite gasket on mine. It did require retorqueing. But as I noted, gasket technology has changed over the years, even in the years since I assembled my engine. Many newer gasket material have gone to the no-retorque style. The instructions that come with the gasket set, which will also tell you what kind of sealers you should use with which gaskets if needed, will say whether it requires retorquing. If it doesn't say, though, then retorqueing would be a good idea.
