I sent you an email from a VCCA member about his steering wheel on his 37. His sits in the straight forward position, as I thought, with one spoke straight down and the two others making a "V". So now we know for sure. I don't really see a problem with setting it up the other way, if that's what you want.
Regarding the grease, my guess would be that you would not lose any grease if all the gaskets are new. The other thing I did is used copper washers under those bolts that ran into the area that holds the grease to seal against leakage around the bolts. That way the grease area is sealed off in all ways.
