This is your truck, do what you like with it. Prewar 1941 Chevy trucks are getting pretty scarce. My vote is to restore it to original condition, with minor modifications to enhance drivability. A 235/261 swap, disc brakes upgrade, and a rebuild of the stock suspension would be high on my list. 1941 cabs are already small. Chopping one may make it even more uncomfortable.
I guess it all depends on what floats your boat in the long run. If your truck is mostly complete a restoration would be logical. If it is missing a lot of parts, has issues with rust, and basically you are saving it from the scrapper... rod it. If you must have the independant front suspension, you might come out ahead of thee game by doing an entire frame swap, or have a custom one built to your specs.
