Things are only worth what people are willing to pay for them at the moment and in the case of NOS it would help if you could find what comparable parts have sold for. Ebay is a good place to research prices. If all else fails, I'd start by asking about 20% over what Chinese reproductions are going for. As for the tailgate, start asking the same as Chinese repops... if it's perfect as in NO rust, NO dents.
