Hop-up books for sbc and Buick 3.8L recommend that a restrictor plate be used if a thermostat is not used. It is possible that without the restriction there is insufficient pressure to reach all potential hotspots. I do know that my 7000 RPM sbc would overheat w/o thermostat and wouldn't with one installed.
