I've broken mine down into three stages - firewall forward, cab, bed. Then when the bed is off the frame will be completely exposed for the mechanical and exhaust work. The reassemble would start with putting the cab back on, then the front sheetmetal and finally the bed.
One of the most valuable lessons I've learned in my life is that there are no big projects, just a series of small projects strung together. If you think of it like that it doesn't seem so overwhelming.
Oh yes... like 3600 says, photograph EVERYTHING for future reference and invest in zip-lock bags and a Sharpies to tag everything, and store parts in boxes that are clearly labeled with ALL of their contents. You cannot be too organized.
