I recently finished my bed wood (Oak) and used spar varnish sanded between coats and I put 6 coats on all sides, especially the ends. If you seal all surfaces it will stand up much better and will not wick water into the boards. With the 6 coat spar varnish job my bed wood looks like furniture. It's a lot of work but worth it.
