I hear that as far as a practical stainless system the 400 series is better, it is less prone to cracking at the weld joints (if there are any).
While the 300 series does tend to eventually crack it holds a better polish longer.
When I get there, I'll use 409 stainless for my truck as I will have lots of welding to do and it won't be polished.
