I've heard of people making that swap, but have never seen a write up giving the details of how it was done.
The motor and trans swap part should be straight forward. The side mount small block was an option in that truck, and the T350 mounts the same as the later Powerglide which was an option in that same series of trucks. I'm sure you'll have some work ahead to make it work.
