Assuming your harness is a new Painless or American Auto Wire setup I'd estimate 16-20 hours to install it.
Then the Vintage Air unit could be another 24-30 hours as long as you have all the compressor brackets and belts ready to go. It will help tons if the shop you pick has done this type of work before and they're not learning on your dime.
The best thing would be to ask them for a rough guess on time...
