I wouldn't let it go 3 years even if it was driven zero miles. Moisture accumulation, oxidation, etc degrade oil in the crankcase whether or not the vehicle is driven. Oil additives also degrade over time whether driven or not.

Once a year regardless of mileage. I still use the 3000 mile rule of thumb.
