To add on to what Clarsen said about bagging and tagging. Clean the parts as you remove them, maybe even paint the small parts.
I ended up with bags of parts all over my garage, so I bought a small shelf unit and a bunch of clear plastic bins. I arranged all the parts by area of the truck in the bins. It's much easier to find the parts for the "Dash" if they are bagged in a bin marked "Dash"!
