J.C. Whitney used to sell a "universal" (doesn't necessarily fit anything) cable-operated thumbwheel for the dashboard that allow spark adjustment while driving.
I used a Triumph choke lever mounted on my handlebars to control the spark on my WW2 H-D (the original was controlled through the left grip, but I didn't have those bars).
