If the gauge cluster is currently out of the dash, it would be easy enough to swap in a 60# gauge into the cluster. If it is still in the dash, I wouldn't bother taking out the cluster just to switch to the 60# gauge.
The 30# gauge will work just fine with a '54 engine. It will peg the needle on 30# while driving, and somewhere below 30# at idle when fully warmed up. I am more concerned about the low end range of oil pressure rather than the high end, so I stayed with the 30# gauge on my '49 with a 350 in it.
Pegging the 30# pound gauge will not harm the gauge whatsoever.
