Everyone will have a different opinion and you're probably going to hear at least a dozen of them. I vote for Exedy and LUK in that order. Some of the rest of them have been just good enough to make a vehicle driveable long enough to find a buyer for it. Particularly the pressure plates. Some of those are junk. I'm using an Exedy currently on an 11 inch flywheel. Get the flywheel surfaced or at least checked by somebody who knows what they're doing. Many of the 11 inch flywheels were used pretty hard in their time. Finding one without hard spot problems, cracks, etc isn't easy.
Is your 11" Exedy a stock organic disc or something else? Do you know where Exedy clutches are made?
I am leaning towards kevlar on one side and ceramic on the other. The last version of that arriangment we used was a Zoom Perfomace clutch on AMC 401 and it held up to HEAVY pulling for years.
I have read that Zoom clutches are now made in China which I am not a huge fan of.
