There are many suppliers of polishing supplies that have complete free books that you can learn the complete process. One tip is you can adjust the diameter of your wheels to the available rpms of your grinder. The outside speed of the wheel is important. Different rpm for aluminum, stainless or plain steel. Belt grinders with narrow and soft backing wheels are another. I also went to the Texas Polisher and spent a modest sum for lessons.
