Dan, both types of gaskets and flanges can be used.
If you have a flat flange on your exhaust pipe, you'll want to use a flat gasket.
You'd want to use a donut gasket if you had a flared exhaust pipe/flange.
The donut set up give more flexibility to adjust the exhaust.
There are many opinions about which one is best. Both work.
