Did you test fit the doors prior to applying the door seals?
-Line them up so the lines are level with the cab?
-Front edge of door flush or 1/16" proud of the cab?
-Did the door latch work properly prior to the addition of the door seal?
It works best if you do these things first.

Anywho...
You may actually have the striker adjusted way too far inward. This may seem counter-intuitive, but it happens a lot. Bring it out until it will latch, then move it in until it squishes the seal.
