It will "work" in the sense that the starter turns, motor fires but soon as foot is lifted motor dies because the coil has no juice from it's "run" source: the Ignition "on".
They are
easy to hotwire, safety switch or not. Use a club on the steering wheel or the gas pedal, hood lock, alarm or don't sweat it.
All you have to do to start it is change the wire from foot starter switch-to-coil over to starter hot post-to-coil(or use a jumper wire) and pull the foot lever by hand from under the hood. There are many other ways. You can't "hide" a switch between battery and starter hot. The starting system is too simple to protect. You may find a way to ground the Dizzy or disable the Dizzy but it has one visible wire from coil.
