i have a need, Please

my wife's car dumped on her and now she wants to drive Lucenda Bolt , our 5 window to get back and forth to school.

Carolines truck is a 51 chevy. e/w a 292ci 6 cylinder and an RV mild cam. it has a clifford water heat intake manifold set up and 3+3 headers. it has a 4 barrel edelbrock 500 carb and I need to change it back to a single barrel carb and some sort of carb/plate adapter mount, a 5 speed T-5 Hybred transmission and a 3:40 rear end.
the 500 wrks ok but uses a lot of gas .

WHAT WOULD be a good single barrel carb for this application ??
who makes an adapter plate ??

rochester with an electric choke?
