Having grown up in the 50's and 60's I can tell you that there was not as many aftermarket accessories available as there are now. We scrounged items from farm implements, trucks, or sometimes old airplanes. On my 1958 Apache "survivor style" truck I wanted to keep the 60's vibe so I used some aircraft instruments. They include a manifold pressure gauge and a tach. For a clock I found a mini quartz clock movement and mounted it in my steering knob. I hope this gives you some ideas.
