You could pick up an electric stomp starter switch to use with your V-8 starter. They were found on Willys military vehicles, some Studebakers, and others. Run a wire from the ignition switch through the floor starter switch as you would any starter button.
They look like a dimmer switch however, not as cool as the factory GM stomp starter. Or you could just make a dummy one growing out of the floor using the stomp starter parts.
