Son has a 54 DRW 3800. Also a SRW 3600 chassis with new brakes all the way around. Wheels I have clear the 3600 rear end but not the 3800 (late model 16ā€ GM). Can I simply swap backing plates, hardware, drums, etc? Your guidance is appreciated!

Are you planning on doing real truck stuff, or building a Cowboy Cadillac? There's a reason a 1 ton has bigger brakes than a 3/4 ton.

How about half way in between. Not enough to need 1 ton brakes. If I wanted a cowboy Cadillac Iā€™d put a disc brake swap and an LS in it.
