Jerry, you realize you're eating fish guts, right?  The Inupiat up here have something called stinkyheads, which are ferment salmon heads. ERRRRK!

Sardines- - - -I like the big ones packed in tomato paste- - - - -the ones that come in the oval shaped cans about 6" long. Small sardines make me think I grabbed a handful of lunch out of the minnow bucket on a fishing trip! Jerry We get those oval cans at the Mexican markets...La Sirena brand. I think the flavor of the small 2 layer ones is best, though. King Oscar, Prince Edward...those are what I get. Also on that sardine sandwich, use lemon juice if you have it. Good stuff!

Canned salmon is what I grew up on Ron, because it was cheap. This was down in Southern CA. But fresh salmon is good stuff. The heads, not so much, especially if they're nearly rotten. The heads make good halibut bait though.

Canned salmon is cat food or catfish chum. Smoked salmon? Well that's an entire matter all together. I will leg wrestle any man or woman for smoked salmon!

We had salmon croquettes frequently when I was a boy. A good and easy way to turn cheap canned salmon into a tasty meal. Add plenty of green onions, celery, peppers, etc to make them more interesting. Instead of bread crumbs, use Cheez-It or other seasoned crackers crumbled. I've even had these made with hash browns and believe it or not, they're good that way. Add lemon juice and catsup, of course, horseradish mustard, sour cream & chives or prepared cocktail sauce. Just remember to make them thin...not over 1/2 inch thick. A good croquette will change the way you view canned salmon, I think.

Salmon croquettes (I think we called them patties) was what Mom would make out of that can of salmon. Added enough filler stuff so that one can would feed a family of 6. Usually with Campbells Cream of Mushroom soup on top. Like I said, it was cheap.

Fortunately we never had them with Cream of Mushroom soup on them. That stuff was reserved for the horrible green bean casserole we had to endure at Thanksgiving. In my opinion that stuff could start prison riots any day of the year.
We did have them with tomato soup on the side, though.
