Microwave peanut brittle- - - - -I'm working on the second batch I've made in two days! Granulated sugar, corn syrup, dry roast peanuts, butter and vanilla extract, and a teaspoon of baking soda. 7 minutes in the microwave, and it's done!

Hey Jerry, have you tried it with raw peanuts? They get cooked in the process ,but they still retain the earthy flavor of raw peanuts which I prefer. If one likes the extra salt provided by the dry roasted peanuts, salt can be added to the batch.
I like mine loaded extra heavy with peanuts. Easier on the teeth.
Microwave peanut brittle is hard to beat. No, it cannot be beat.

You make it real easy to hate you when the big "D" (diabetes) leaves one with a pet rabbit on a leash to lead around and eat only what it does. Years ago young people from one of the offbeat church's use to bring some really good peanut brittle by the shop so I'd pig out till my teeth hurt. Now my biggest treat is fresh Brussels sprouts sprinkled with olive oil---yum.

Evan, as one of our former chief executives used to say, "Ah Feels Yore Pain!" I've been borderline on the blood sugar for about 50 years, so I eat a metric ton of steamed and/or raw veggies and other rabbit food so I can indulge in the occasional sweet treat. I definitely don't subscribe to the popular opinion that "veggies are what food eats!" I leave that up to my brother-in-law- - - - -he's a "steak and potatoes" guy at virtually every meal, but he's also 82 and counting. Different strokes for different folks!

what are the proportions, Jerry? How much of this and that to get the right mixture? I have to try this! For a minute there, I was thinking you were going to mention the use of a cutting torch to heat the mix after blending it in your tumbler and cutting it with your bandsaw...

I guess I am lucky, I eat what I want and lost some weight since I retired and when I go to the Doctor for annual and want to know why I go, one even asked if I want to come only once a year. The biggest issue is my teeth and skin cancer, I am awaiting the results of a biopsy this week. I have had 9 minor operations. May have to have 2 more. Living alone makes the bandaging process difficult one is above my right eye but the other one is on my spine area and changing of the biopsy place is going to be fun.
